Venison Carbonado

3 1/2 to 4 pounds Venison
1 Envelope dry onion soup mix
1 12-once can beer
Chili sause to taste
Place venison in roasting pan. Sprinkle with dry soup mix. Bake at 375 degrees,
uncovered untill onions begin to brown. Blend beer with chili sause and
and pour over meat. Lower temperature to 300 degrees and bake 3 - 4 hours until
fork tender. Gravy may be made from pan drippings.
